How to bake date and walnut banana bread recipe

Homemade banana bread naturally sweetened with dates and honey

A delicious tea-time treat that is naturally sweetened with ripe bananas, dates, and honey. Not only is it free from refined sugars, but it is also gluten-free and dairy-free!

Ingredients

  • 80ml melted coconut oil, plus a little extra for greasing the tin
  • 60ml honey
  • 2 large free-range eggs
  • 2-3 medium ripe bananas, mashed
  • 60ml coconut water or almond milk
  • 1 tsp baking soda
  • ½ tsp salt
  • 225g buckwheat flour
  • 100g dates, de-stoned and roughly chopped
  • 50g walnuts, roughly chopped

Method

  1. Preheat the oven to 180c / 160c fan and grease a 9×5-inch loaf tin.
  2. In a large bowl, beat the coconut oil and honey together with a whisk. Add the eggs and beat well, then whisk in the mashed banana and coconut water/almond milk.
  3. Add the baking soda, flour, and salt, and whisk to blend until smooth. Lastly, gently fold in the dates and walnuts.
  4. Pour the mixture into the greased loaf tin and bake for 55-50 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool down in the loaf tin for 10 minutes, then transfer it to a wire rack to cool for at least 20 minutes before slicing.
